पालकाची ताकातली पातळ भाजी - Spinach, peanuts, buttermilk curry.











Ingredients:
Spinach leaves 1bunch -washed and finely chopped
Groundnuts (unsalted ) - preferably soak in water for 5 -10 min for softening
Buttermilk - 2 cups
Rice flour- 1 tbsp
Water -1cup

For Tempering :
oil -1 tsp
Jeera /cumin seeds -1tsp
Asafoetida /hing -2 pinches
Salt
Curry leaves -3 /4 nos
Turmeric -1 pinch
Green chilles 2-3nos.
Garlic- 2 cloves (optional)

Method:
Finely chop the washed spinach leaves. Heat pan add oil .once heated add cumin seeds ,curry leaves garlic,chillies (cut in slits),turmeric and asafoetida.
Add the finely chopped spinach leaves.
Lower flame and let it cook for 2 min .
In a separate jar add buttermilk and 1 tbsp of rice flour. Mix well. Add this mixture to the pan. .Then add the peanuts and 1 cup water. Stir well and let the curry boil for 8-10 mins. Add salt as per taste. Serve hot with rice .
Tip:Rice flour thickens so add water as per preferred thickness.

भाजणी थालिपीठ- Bhajani Thalipeeth

Ingredients
1 cup bhajani flour (mix flour made from, gram, udad dal)
1 medium onion chopped
1/2 tsp turmeric powder, red chilli powder
1 cup boiled water
salt to taste
Oil as required

Method
Mix all ingredients in a bowl. Add 1 tsp of oil, now add boiled water. Should be just as enough to make the flour mixture moist. After the mixture is cooled add cold water to make dough. Apply oil to your palm and on a plastic sheet. Now take small portion (size of lemon) and make round pancakes by hand. Do not use  rolling pin.
Take tava and apply oil. Put the pancakes and cook them on both sides till golden brown. Serve with yogurt or chutney of your choice.

भरलेली सिमला मिरची - Stuffed Capsicum

भरलेली सिमला मिरची -

साहित्य
२-४ माध्यम आकाराच्या सिमला मिरच्या / ६-८ छोट्या सिमला मिरच्या
४ माध्यम आकाराचे उकडलेले बटाटे
१ चिरलेला कांदा
२-३ tbsp आल लसूण हिरवी मिरची पेस्ट
२-३ tbsp कोथिंबिर
मीठ चवीनुसार
तेल

कृती
प्रथम सिमला मिरच्या मध्य भागी कापून घ्या. (एका मिरचीच्या २ वाट्या ). आता उकडलेले बटाटे कुस्करून घ्या त्यात कांदा , आल लसूण हिरवी मिरची पेस्ट, मीठ  घालून छान मळून घ्या. हे मिश्रण मिरच्यांकडे भरा. आता एका पण मध्ये थोडा तेल घाला आणि मिरच्या वर ठेवा. एक वाफेवर शिजवा छान खरपूस होईपर्यंत. चिरलेली कोथिंबीर  घालून  सर्व्ह करा. भरलेली सिमला मिरची तयार!

मेथांबा-Raiwal Mangoes in tangy sauce!

साहित्य
३ रायवळ आंबे
२/३ सुक्या लाल मिरच्या
१/२ वाटी खोबरं
१ वाटी पाणी
1 चमचा मीठ
फोडणी साठी मोहरी/Methi आणि तेल हळद
कोथिम्बिर २/३ चमचे

कृती
प्रथम आंब्याचा रस काढून घ्यावा. आंब्याच्या कोयी वेगळ्या  बाजूला  काढून घ्या. आता  एका कढई मध्ये फोडणी करा हळद घाला, सुक्या मिरच्या आणि खोबरं परतून घ्या. त्यात रस घाला आणि चवी पुरतं  मीठ. आता अमाब्याच्या कोयी घाला आणि १ वाटी पाणी ,एक उकळी येईपर्यंत शिजवा. मेथांबा तयार . पोळी बरोबर छान लगतो . नक्की करून पहा!

काजू उसळ - Cashews in spicy curry sauce


(This recipe is specially made in coastal region of Maharashtra Kokan and Goa) Recipe credit : Vipul Thakur

Ingredients
2 cups cashews soaked in warm water

For paste
1 cinnamon,
1 tsp mustard seeds,
1 tsp khuskhus,
5/6 black pepper,
1 tsp oil,
few soaked cashews
1 cup grated coconut
2 medium onions

For curry
1 tbsp oil
1 tsp mustard seeds
1 tsp garam masala
1 tsp red chilli powder
2/3 cloves of kokum
jaggery as required/ sugar
2 cloves garlic chopped
water approx 1 ltr

Method
1) To make the paste
In a pan add oil, and saute  all the ingredients required for paste for few minutes. Now grind this mixture and keep aside.

2) Curry
In another kadhai/pan take oil, now add mustard seeds, garlic cloves and red chilli powder garam masala saute.  Add the soaked cashews. Saute for a few minutes. Now add water as required depending on consistency of gravy. Add the above paste, along with little jaggery, kokum cloves and salt as required. If you want a thicker gravy grind few soaked cashews and add to the mixture.  Cover the pan with lid and cook till done.

Serve with chopped coriander and any bread/rice jowar bhakri.

साबुदाणा वडा - Sabudana Wada- Crispy Paties made from Sago Seeds


Ingredients

  1. 2 cups of soaked sabudana/sago seeds
  2. 1/2 cup groundnut powder
  3. 2 chopped chillies/ 1 tsp chilli powder
  4. 1 large boiled potato mashed
  5. 1 tbsp cumin seeds
  6. salt to taste
  7. water as required
  8. Oil for frying


Method

  1. In a bowl add all the above ingredients and make dough like mixture by adding just a little water. The consistency should be such that it should be dry & you should be able to make paties. 
  2. ( Do not add more water as the mixture will become soggy, remember the soaked 'sabudana' also has water content)
  3. Make small patties and deep fry in oil.
  4. Sabudana wada is ready. Serve hot with any yogurt/ groundnut chutney. Enjoy!

भाजणी चकली - Bhajani Chakli- 'Chakri ' savory rings made from mixed flour.



Ingredients

2 cups chakli flour/bhajanee
3 tsp red chilli powder
1 tsp turmeric powder
1 tsp ajwain
1 tsp sesame seeds
salt to taste
3 tbsp oil
2 cups water

Oil for frying, chakli maker.

Method

Mix all the ingredients except the water in a bowl. Boil 2 cups of water, once done add the above mixture, keeping the flame very low. Mix well. Give it a steam for 1/2-1 min do not overcook it. Remove from flame and let it cool. After cooled make two parts and fill one in the chakli maker. Make round chaklis. Deep fry till golden brown in colour. Your chaklis are ready to eat.
