Tarbujachi koshimbir: Tasty musk melon raita (salad in yogurt).

This is a sweet and spicy mix (koshimbir) ready in few minutes. Combination of sweet musk melon with spicy green chillies gives this dish a unique flavour.

Ingredients:

1 bowl musk melon chopped into cube sized (qty as required)
1/2 cup yogurt
3-4 green chilles
1/2 cup coriander
salt to taste


Method:

Cut the melon into small sized cubes. Whip yogurt into a smooth paste. Grind the chillies and coriander to make chutney. In a bowl add whipped yogurt, chilli coriander mixture, chopped melon, salt to taste and mix well. Top it with red chilli powder to add extra spiciness. Serve it as a side or eat as it is.

लाल भोपळ्या च भरीत - Lal Bhoplya cha Bharit



साहित्य :

२ वाटी लाल भोपळा मध्यम चिरून (साल काढून)
१/२ वाटी दाण्याचा कूट
१ हिरवी मिरची
१/२ चमचा साखर
मीठ चवीनुसार
१ वाटी दही

फोडणी साठी :
१ tbsp तेल
१ tbsp जीरे
४-५ कढीपत्त्या ची पाने
१/४ चमचा हिंग
१/४ चमचा हळद

कृती :

प्रथम लाल भोपळा चिरून त्याचे मध्यम फोडी करून पाण्यात १५ ते २० मिनिटं शिजवावे. थंड झल्यावर पाणी काढून टाकावे. चमच्याचा साह्याने भोपळ्याचे फोडी हलके मॅश करून घ्यावे. आता त्यात दाण्याचा कूट, हिरवी मिरची, मीठ, साखर आणि फेटलेलं दही घालून मिश्रण एकजीव करावे.

एका लहान कढईत तेल गरम करायला ठेवावे. तेल गरम झाले की त्यात जिरे, कढीपत्ता, हिंग आणि हळदची फोडणी करून ही फोडणी भोपळ्या च्या मिश्रणावर घालावी. मिश्रण नीट एकत्र करून घ्यावे.

लाल भोपळ्या च भरीत तयार.पोळी आणि भाकरी बरोबर हे भरीत उत्तम लागते.

हे भरीत दह्या शिवाय सुधा छान लागत.

बीटाची कोशिंबिर - Spicy Beetroot Salad

Ingredients: (Serves- 2)


4 medium beetroot boiled
1 tbsp butter
1 tbsp cumin seeds
2 medium chillies (as per taste)
Salt to taste

To Garnish- chopped coriander

Method:

Chop the beetroot in to small cubes. Add salt to taste. In a small wok/kadhai heat the butter, add cumin seeds and chopped chillies. Saute for about a min. (This method is also called as Tempering/जिर्याची फोडणी /Tadka).

Add this tempering to the chopped beetroot and mix thoroughly. Garnish with chopped coriander and its ready to eat.

Kanda Tomato Chi Koshimbir (Tomato Onion Mixed Salad)

A simple and healthy finger-licking side dish. A perfect accompaniment for your meal.


Ingredients: (Serves- approx 2)
 

1 Onion
2 Tomatoes
2 Green Chillies
2 tbsp Daanyacha kut ( Roasted Peanut Powder)
1 tsp Sugar (Optional)
Salt to taste
1 tbsp Oil
1/2 tsp Mustard Seeds
1/4th tsp Turmeric Powder
1/4th tsp Hing (Asafoetida)
Coriander leaves for garnish

Method:

Finely chop onion, tomatoes and green chillies. Transfer it into a bowl.

Add roasted peanut powder, sugar, salt and mix well. Sugar is added just to overcome the sourness of tomatoes and to enhance the flavor.

Tempering:

In a small kadhai (wok) add oil and mustard seeds. When mustard seeds crackle add turmeric powder and hing..

Add this tempering over the chopped onion & tomato mixture and mix well.

Garnish with cilantro (coriander) and serve.

Note: You may chop onion and tomatoes roughly as per your preference. This koshimbir is very refreshing and goes very well with Poli (Indian bread/chapati) and Dal ( Lentil Curry) Rice.

The main flavor of this koshimbir comes from the roasted peanut powder so don't eliminate it or else it will taste differently. Enjoy !
