A sweet delicacy prepared on Narali Poornima in month of Shravan. The combination of fresh coconut and jaggery with hint of spices gives this dish a unique flavor.
Ingredients
1 cup rice (grains)
3/4 cup jaggery
3/4 cup grated fresh coconut
2/3 cloves
1 tsp nutmeg powder
4/5 cardamom crushed/powdered
dry fruit mix/ pistachios for garnishing.
Method
In a pan add 1/1/2 cup of water and boil the rice. Add hint of butter so that the rice does not stick together. Add cloves & cook till done. Keep aside and let it cool.
In another pan add jaggery. Cook on a low flame till jaggery separates from sides. Now add grated coconut, remaining spices and rice, mix well. Cover the pan with a lid and let it simmer for 5-10 mins till done. Season with mixed dry fruits or pistachios, delicious sweet coconut rice is ready to eat!
