पुरण पोळी -


पुरण पोळी - 



Sweet Indian flat bread stuffed with jaggery mixture (puran). Puran- jaggery and chickpea mixture flavoured with cardamom and nutmeg.

Special Maharashtrian sweet dish made on fes

tivals and especially during auspicious month of Shravan/Ganesh Chaturthi. Served with hot butter/ghee or with warm milk.

Ingredients (approx 3-4)
For Dough
1/2 cup flour
1/2 cup maida
1/4 cup oil
pinch of salt
water as required

Filling/Puran
1 cup boiled chana dal
3/4 cup jaggery
cardamom & nutmeg powder as required

Method for Dough:
Take the above ingredients and make dough adding oil in portions. Texture of this dough is slightly different than what you make for normal rotis due to the oil. Leave the dough for at least 2 hours covered.

Method to make Puran
Rinse the chana dal first very well in water. Soak the chana dal for 30 minutes to one hour and then drain the water. Cook for 5-6 whistles, drain water.
In a pan add boiled dal and jaggery cook it on medium flame. Add cardamom and nutmeg powder. Stir constantly. Cook till the mixture separates from the sides of the vessel/kadhai. Remove from flame keep it aside to cool. Now blend in a mixer to form a paste.

Method to make Rotis/Poli
Now take the dough roll it out in small portions (2-3 inch circumference), Place the filling in the center. Close the edges to make small patties .Now take handful of flour on the rolling board and roll out rotis/polis elegantly ensuring the filling does not pop out. * Ensure that rotis do not stick on the board. **The outside cover of the poli is thin and NOT thick like 'paratha'
On a pan/tava place the rotis and cook on both sides till light brown in colour.
Puran poli is ready. Serve (either hot or cold) with warm milk / desi ghee/butter.
